Adzuki bean also named small red bean, oriental bean, Chixiaodou or Hongxiaodou(In Chinese) is a tiny, reddish-brown bean with a sweet and nutty flavor. It was cultivated in China and Korea before 1000 BC, and later taken to Japan, where it is now the second most popular legume after the soybean.

Traditionally, in Chinese cooking adzuki bean is made into red bean soup dessert, or people will boil it with sugar and then mash into a sweet red bean paste. Besides, adzuki beans are also known for their de-hydrating properties which help promote urination to eliminate edema, swelling and dampness. Adzuki bean is a good source of magnesium, potassium, iron, zinc copper, manganese and B vitamins. As a high-potassium, low-sodium food, it could help reduce blood pressure and act as a natural diuretic. When combined with grains, beans supply high quality protein, which provides a healthy alternative to meat or other animal protein.

Here is an easy recipe about adzuki bean recommended to you:

Adzuki Bean Paste

Ingredients:

  • 1 500g Adzuki Bean;
  • 2 50g Sugar;
  • 3 2g Salt;
  • 4 10ml Oil;
  • 5 Enough Water

Directions:

  1. Soak the adzuki beans overnight in water;
  2. Put the adzuki beans in a cooker (with the water 1 to 2 centimeters over the adzuki beans ) and cook for about 30 minutes until the beans get tender;
  3. Filter the semi-finished bean paste;
  4. Fry the bean paste filtered with oil, salt and sugar ceaselessly
  5. When the consistency of adzuki bean paste meet your demand, take off flame.
